Hot Cup of Awesome (Paleo)

One of my favorite things.

I like coffee in the morning, but I don’t always drink it. I call this quick throw-together drink a hot cup of awesome, because well, I find that to be an accurate description. This hot beverage will warm you up on a cold morning, and the fat content will help keep you energized and satiated. For that reason I’ll whip one of these up at time where I’m hungry and have no idea what I want to eat. The hot cup of awesome is simply a 1:1 ratio of chicken stock and coconut milk along with some red curry paste. That’s it, and you can add green onion slices (the white ends are the best for this) if you want to be fancy. This is one of my favorite treats that I simply cannot live without. Hope you enjoy it as well!

How you make it:

  1. Combine equal parts of chicken stock and coconut milk in a sauce pan over medium heat. If you want to end up with 1 cup total, start with 1/2 cup of each.
  2. Add as much or as little red curry paste as you like. For starters, if making a cup or so of total liquid, start with a tsp of red curry paste. If you love spicy and curry, use more.
  3. Stir well and adjust heat until desired temperature is reached.
  4. Pour into a mug or thermos to enjoy. Garnish with the sliced white ends of a green onion if you have them and like that sort of thing.

      Usually as a side, or sometimes when waking up and I will eat a meal an hour or so later. Depends on my mood and appetite that day.

    So, this reminded us of a tom kha (spelling?) that we have at one of our favorite thai places. so we are making a big pot, adding green onions, cilantro, a little lime and shrimp. Possibly a little fish sauce or Coconut Aminos if its needing any salt. Will let you know how it turns out. It 15* here now with a wind chill of 0 so sounds like a pot of awesome is in order!

    So, we used 2 cans chicken broth, 2 cans coconut milk and a 1/2 can of just the fat from a 3rd can. plus an entire jar of Red Curry paste and it still has no spice! did we use too much liquid? your recipe is a ~tsb curry to a 1-1 coconut/chicken.

      Yes, you need to add more curry paste. I recommend a tsp to a tbsp of curry paste per cup of liquid. Since cans are usually about 12 ounces, and used about 4 cans worth of liquid, meaning about 5 cups of liquid or so, you will need to increase the amount of red curry paste accordingly.

      Having too little spice is better than too much, you can always add more! This should be an easy fix, good luck!

        yup, completely mis-read your original post! we got it “close” to what we wanted but ran out of curry paste. Next time will be better.

          Cool, glad you have it figured out. As you could imagine, curry pastes are one of my regular cupboard staples that I stock up on.
