Paleo Instant Pot Kielbasa with Sauerkraut and Potatoes

This recipe is a hearty real-food dinner, with minimal prep time. The potatoes are optional, you can skip them or swap them out for other root vegetables. Or simply add more sauerkraut.

This is not a true dump-and- go recipe, we will actually be using the Instant Pot’s saute mode to sweat the potatoes and onions before adding the remaining ingredients and cooking on Steam mode for 10 minutes. You’re gonna have to peel and dice up a few potatoes and a small onion though.

If you plan to have this recipe cook and then stay for a while in keep warm mode, make sure to add more water in the beginning to be safe.

Equipment used:

Ingredients:

  1. 2 cups of water
  2. 1 pound of either chicken, turkey, or beef kielbasa, cut into 1″ slices
  3. Sauerkraut. Minimum one can, optimally 2-3 cups worth. More if you love the Kraut.
  4. 1 to 2 white potatoes, peeled and cut into a large dice. If you want firmer potatoes, cut them into larger pieces. (skip these if you wish). Around 2 to 4 cups.
  5. 1 small white onion, cut into a small dice. About 1 Cup.
  6. 1/2 tsp of sea salt
  7. 1/2 tsp of ground black pepper
  8. 3 tbsp of olive oil

How you make it:

  1. Remove your Instant Pot lid and set aside. Press the sauté button, and then the adjust button to set it to high heat. Add your olive oil and wait for the oil to crackle in short time.
  2. Add your diced potatoes and onions, stir them around the pot for a minute or so using your flat edged spoon to scrape anything sticking to the pot.
  3. Cook for a few minutes until the potatoes and onions appear to have softened a bit. You do not want to fully cook your potatoes! We are just getting some flavors to come out of them with the onions.
  4. Press the cancel button to turn off your Instant Pot from sauté mode.
  5. Carefully add your sauerkraut and water, and stir well.
  6. Layer your slices of kielbasa along the top of the kraut and potatoes.
  7. Cook on the Steam setting for 5 minutes.
  8. You can quick release and eat, or wait up to 10 minutes on keep warm mode. Staying in the pot in the keep warm mode for too long can result in mushy potatoes.
  9. I love this meal, having been making my other kielbasa and kraut recipe in the slow cooker for years. Pairs nicely with a spicy brown mustard.
