Paleo Friendly – Chicken Cacciatora

I love this recipe. It’s for one of those days where you know you’ll be working and running around all day, might miss a meal somewhere in the middle, and are too tired to cook when you finally get home. This one takes no more than 10 minutes of prep time in the morning, while your eggs and bacon cook. I personally eat this over a bed of steamed spinach.

    Add a small can of diced green chiles. It makes this recipe even more fantastic!! My husband and couldn’t stop eating it!! It is familiar to one of my mom’s favs, gypsy stew! With less work!

    This was SO-melt in your mouth-GOOD! I used chicken thighs and substituted some leftover chunky tomato sauce for the chopped tomato because that was what I had on hand. I can’t wait to try many more of your recipes!!

    So, I just got around to figuring out dinner (thanks Mr. Flu for getting me sick and turning me into a bum)… Can I cook this on high for 4 hrs instead, or will I risk the recipe not turning out right, or the chicken not cooking fully? (I’d be using bone-in thighs, if that makes any difference)

      It really depends on the size and power of your cooker. Cooking on high may just take less than 4 hours, I’d only do it if you were around to check on it.

      Sure, leave them out and add in some fresh tomatoes and more mushrooms.
