20 minute reals…
This is something I whipped together the other night, and have been craving it ever since. You all know PaleoPot for slow cooker recipes, yet this blog will be growing to include one-pot stovetop recipes as well. Sometimes they just work best with what you have on hand when you don’t have the time to wait for your slow cooker. All you need is a deep pot, stock pot, or dutch oven type pot. Something that’s about 6 quarts or larger will do.
What you need:
- One pound of chorizo sausage, quartered lengthwise and then chopped into 1/2″ pieces.
- 1/2 Tbsp of coconut oil.
- One can of coconut milk.
- 2 cups of chicken stock.
- 1 cup of water.
- 1 medium white onion, chopped.
- 1/2 medium red onion, chopped. (optional)
- 1 jalapeno pepper, diced (optional).
- Enough kale to cover the top of your pot (about 3 handfuls).
- 1/4 tsp of sea salt.
- 1/4 tsp of red pepper or chipotle flakes.
How you make it:
- Add your coconut oil to your pot and set the heat to medium.
- Add your chorizo and raise heat to medium high. Stir chorizo until it starts to sizzle and gains a light sear.
- Lower your heat back to medium low while you chop your onions and pepper.
- Add your onions, jalapeno, salt, and red pepper flakes and stir well.
- Once onions are slightly softened and colored by the chorizo, add your coconut milk, chicken stock, and water.
- Raise your heat to medium high again until the liquid reaches a simmer.
- Drop is as much kale to your pot that will cover the surface of the liquid, then stir the leaves in well.
- Lower your heat to medium low and cover.
- Let pot simmer lightly for about 20 minutes, then enjoy.
- Garnish with some red pepper paste like I did if you are awesome.
I hope this type of recipe works out for you all. It really is a super tasty and easy meal and is a good representation of how I usually improvise dinners. Love both chorizo and kale, so this is perfect. I added a jalapeno salsa to it, quartered tomatoes and cubed kohlrabi.
MMMMM! I’ve tried the hamburger meatloaf, and the sweet potato layered with beef crockpot recipes, and those were fine enough, but not something I would serve to most company! Not like I have company anyway, but this… This is something quick and easy that can feed guests, and it’s super good! I’m so proud of myself 🙂

Looks and sounds yummy. From someone that really doesn’t like to cook but trying to get the family to eat healthier. More ‘one pot’ easy meals, pls!

I made this tonight. I doubled the soup, but kept the chorizo amount the same (cut down on some calories and fat) and used lite coconut milk. I also added fresh nutmeg, as I always do when I cook with dark greens. It’s so wonderfully rich and complex! YUM!

Yes, please do more one pot meals! But don’t say “20 minute reals” when the soup had to simmer for 20 minutes after I did all the other stuff. I was bummed when I got to that part of the recipe b/c I’m STARVING!
made this last night! It was amazing!!! I think i might use less sausage next time to cut down on the fat but it was delish!!! Will def put this in my dinner rotation! I’m new to paleo, so this was a great way to get started!!

I tried to find the chorizo that looks like the picture, but only found ground chorizo. Where do I find the chorizo sausage?
I made this for dinner tonight. It was very good! I substituted the Chorizo Sausage for “Sun-Dried Tomato Chicken Sausage” and it was yummy. I used “lite” coconut milk and it was fine for the recipe.
Oh my stars! I’ve made many recipes from your site, but this is the best one yet.
I used spicy chorizo and left out the jalapeno & red pepper flakes. Then I thought decided it needed more kick and added cayenne. To.Die.For. Next time I’ll increase the Kale, but then I’m crazy for kale.

Just made this tonight and can’t believe how delish it was! I’m not usually a soup girl, but I could eat soup every night if it was always this good. I subbed a andouille-style chicken sausage but think it’d be great with any spicy sausage. Thank you for sharing! I look forward to trying more of your recipes.
We love being Paleo! I use Portuguese Chourico instead of the chorizo and it has a bit more smokey heat rather than the straight heat of the peppers and chorizo. Great site!

Ohmigod, this was excellent! I was a little hesitant as I’ve never had chorizo before but after reading all the positive feedback I decided to give it a whirl. Glad I did! I now have this dish bookmarked under my favourite Paleo recipes. : )
Made this tonight… it was AWESOME! We don’t eat “Paleo” – more WAPF, so we peeled and added some potatoes that needed to get used up. My 2 year old chowed it down – even the kale. A big hit. The coconut milk was delicious in this.

I made this last week and it is amazing! The best part is how easy it is to make. Very little effort for something so delicious. My colleagues are addicted and have asked me to make more next week.
I added one large can of diced tomatoes as well as a pinch of coriander and cumin because I was craving more veggies in the soup.
This has become one of my regular go-tos. So damn good, and so easy to prepare! I use ground chorizo most of the time and it works fine. I even went half chorizo/half regular ground pork sausage last night and it was just as good. Love the site – I have yet to try anything that I am not now addicted to (and I’m not even a die hard “paleo-ite”). Keep up the good work.

Simmering on the stove as I type this. I make this soup at least once a week. It is perfect for winter here in Alaska. Though I use reindeer sausage instead of chorizo.

No, sorry. I don’t tally nutritional counts for my recipes. You can always use a site like fitday.com to pop in the ingredients if you need to.
I’m loving your site – perfect for a beginner in the kitchen. I’m single and like to cook and freeze. Is this soup suitable for freezing?
Sure, I’d give it a go. Just don’t forget about it in the freezer for too long!
FYI – this never makes it to the freezer like everything else I make. I eat this up in a couple days!

I have not been feeling well the last few days, mostly because I have not been eating paleo foods. I tried this tonight to warm me up and feel better. WOW!! This was AMAZING! I just sent this recipe to some friends and family that do not do paleo. This was an instant favorite and will make it over and over again 🙂 So quick, and easy, and delish! I LOVED this soup! I substituted a hot/spicy sausage for the chorizo and ommitted the red pepper flakes – it was amazong!!!!!!
